The most commonly available cinnamon in markets these days is Cassia cinnamon (aka Chinese cinnamon). What we offer here is Ceylon cinnamon.

Ceylon cinnamon has much more health benefits whereas Cassia cinnamon is known to contain naturally occuring toxins which has resulted in several warnings, advisories as well as bans in the EU. Ceylon cinnamon is harder to extract and even harder to roll since they are relatively thinner than Cassia cinnamon.

This cinnamon is sourced from areas adjoining the famous Anjarakandy Cinnamon Estates once spread over more than 1000 acres. This batch is from last years harvest.

The same Ceylon Cinnamon. This one’s grown in Kerala. The plantation was started by the British.

The only difference is in how the bark is removed. In Srilanka, the stem is beaten till the bark comes out. So It is in the form of a coil. In Kerala, the bark is chipped out using knife.

Taste and aroma is same in both as both are same species grown in different places. Has a mild aroma and a mild and sweet taste. Used for taking directly (supplement) and in sweets and sweet dishes. Light yellow colour.

(The java variety is reddish, violet in colour and has an overpowering and strong taste and aroma. It’s used in Biriyani and other non veg dishes. Toxic if taken directly)
